The story

Grand Central Terminal opened on 2 February 1913. Three weeks later the Oyster Bar opened underneath it, 440 seats beneath a vault of Guastavino tile. By the early 1970s the long distance trains were finished and so was the restaurant: derelict, bankrupt, shut. The Metropolitan Transportation Authority asked the restaurateur Jerome Brody to take it on, and he reopened it as a seafood house. A 1997 fire burned hot enough to melt the fixtures, and the tile vault had to be remade.

Sit at the counter, not at a table. The counter is where the oyster pan roast is made, in swivelling steam kettles a few feet in front of you, and watching it is half of what you are paying for. Between 25 and 30 varieties of oysters arrive fresh each day, so ask which came in this morning instead of reading the list.

Before you go in, stop in the archway outside the door. Face into the corner and speak quietly. Whoever stands in the opposite corner hears every word. It is free, and most people walk straight past it.
